- 250g pumpkin (raw and clean)
- 250 g flour
- 200-250 g sugar
- 3 eggs
- 70 ml of oil (olive or sunflower)
- Yeast: about 12 grams
Baking time 35 minutes
To begin remove the skin and seeds of the pumpkin. After cleaning it we grate it and put it aside in a bowl.
In another bowl, gradually mix the eggs and with 200g of sugar. When we have the dough consistent, we can add the flour and yeast.
Add the grated pumpkin and a teaspoon of cinnamon to the mix. Whip well and pour into the mold.
Cook for approximately 35 minutes. You can make sure it’s ready by poking the cake with a toothpick, if the toothpick comes out clean, it´s ready.
Let it cool and then it´s ready for serving this Thanksgiving ;)
